Funny Nog - this just popped up in my feed today and I thought I've gotta give it a try.
If you haven't checked out the Hunter, Angler, Cook Podcast, it's a fun listen for long drives.

I want to try it with bear. I also want to try a bear ham this year. But first - gotta get a bear. The last one got eaten pretty quickly!
I Nog your going to absolutely love this recipe.
Ours is very similar, works great for Moose and Elk too.

I'd like to give that a try as well
good idea, with many recipes usually listing similar spices in varying measures
we just put away a batch of corned moose done with a cheater recipe using pickling spices
sliced up thin ready for samitches
Glad to say I have hunted Northern BC
Simon Fraser had pretty good judgement on what he found in BC
Sliced thin is the secret..... Also sliced and fried in substitute of bacon is terrific at breakfast too

We've been off bacon for a while now, way too pricey for what you get
Its either venison sausage patties, double smoked pork shoulder, or corned/pastrami moose
bacon has become the treat , like turkey
Glad to say I have hunted Northern BC
