I lived on the west coast for 12 years and heard of no-one doing this.
Kippered herring I have eaten from a can.
I have caught 100's of pounds of herring but only used them for bait.

Kippered herring is salt brined, smoked and canned herring.
It would be a lot of work just packing the jars.

Not for a while but Dad used to go to the docks in Naniamo and buy from the commercial boats and can up 3 or 4 dozen jars a year
as well as smoke some
not sure of the weight but iirc at least 3 20l. pails worth
Glad to say I have hunted Northern BC
Simon Fraser had pretty good judgement on what he found in BC
Not herring but I old friend use to do fresh water fish, pea-mouth in to kippers or roll-mops. There’s a couple of lakes by P.G. where you can catch a hundred in no time.

I was thinking on getting to kippered herring once I get the canning figured out. That was part of the inspiration as we love kippers. Commercial cans have too much sodium for us.

Interesting! Never heard of pea-mouth. How would one go about catching them?
pea-mouth #22 hook maggots ice fishing works good. Good old bobber and worm in summer. Taginchil and Nickel lks anything you throw in the water they go for.
