Here is the basis for the recipie I am going to try...
"Here's an easy recipe that works for any diver duck. Breast out the duck and legs. [skinned] Breast should boneless. In a glass bowl combine.
Balsamic vinegar
olive oil
soya sauce
Worchester sauce[optional]
Garlic powder
Ground black pepper
The amounts will depend on the amount of meat. For 2 ducks I usually use 2 or 3 tablespoons of the liquids and just what looks right of the powders. sorry, but I don,t measure.
Marinade your duck at least 3 hrs in fridge, stirring once or twice.
In a non-stick fry pan. pour a little olive oil, Chop an onion course, and chop 3 lg. jalapeno peppers[seedless]. If you can handle it use habanero's. Saute onions and peppers for a few minutes than add your duck. Saute both sides un til done to your liking. Too long and duck will be tough so watch and check your birds.
I use this recipe for bufflehead and goldeneye and I enjoy it a lot.

I grew up in a house with a law that what you shot you ate. Needless to say I've had many meals I'd rather not discuss. My newest recipe for any shit-duck or nasty vermin you shouldn't be eating is this:
1) Marinade overnight in Coconut rum and brown sugar
2) Slice the breasts in half butterfly style
3) quick fry in bacon grease keeping pink in the middle
Merganzer, squirrel, jackrabbit, you name it, this should mask it all.
I think there was a good one on here long ago about eating fish duck. marinade it in all the things mentioned here and boil with a rock for a day. toss out the duck then eat the rock. something like that.
but seriously, the best way is to make into a stew with turnip and other stew stuff. let cook away for a couple hours. that is the only true way i like to eat duck. it is actually really good like that.

I roasted one several years ago and it was excellent but a little different taste than mallard/widgeon. I think it depends on their diet just like any duck.
Divers that are eating primarily eel grass are about as good as grain fed mallards. We just don't see them very often.
