I'm having Pizza tonight before I butcher my deer. It's been hanging for 8 days now. Macster and I are deboning it, making steaks and roast. We're going to use the front shoulders, neck and ribs to make sausages. Who knows maybe I'll have a steak on the BBQ later on tonight.

You just have no idea what you're in for - you think you've had good venison before - but blacktail is a succulent little deer .

    butchered deer

Well we got the deer butchered. It took us about 3 hours to get it boned out, cut, and bagged. We must have gotten about 30-40 lbs of meat for sausage. We made steaks of the tenderloins and hindquarters. We used the rest of the deer for sausage. I got my wife Stephanie to fry us some steak while we were cutting up the meat, we couldn't believe how tender and good it was. We were worried the meat was going to be tuff because the buck was in full rut. He stank so badly when we got him and he turned out to be some really good eating. Macster is bringing the cubed meat in this weekend hopefully to get some sausage done at the local butcher shop.

For those who don't know - a moooose burger is what you get when you shoot the child of a cow and an ugulate who had bad eyesight.
