    Biltong

Has anyone around here ever tried making Biltong with venison?? How did it turn out? I hear its alot like jerky just without the smoking... A friend from work was raving of how his father in-law makes it with eye of round bought from Costco. I'm always looking for new things to try.

I used to get The Galloping Goose Sausage Co. to make it for me with my venison every now and then, it was hard as rock and dryer than dry could get, you could chew on it for a long while, had a great taste also.

Sometimes I'd cube it up and add it to soups. Now you've got me wishing I had some.

I might just try my hand at that info, thanks.

There used to be a South African food stoer in Cadboro Bay in Victoria that used to sell commercially made biltong from South Africa. It was very good but they are no longer in busimess. Basically, the pieces that I bought and tried looked like big sirloin steaks that were air dried or dehydrated. Very good to chew on.

    Re: Biltong

There is a butcher shop in Pt. Kells (Surrey) called S.A Sausage that makes biltong and boerwours sausage (sp?). He once told me he would make some biltong out of a moose leg if I brought it into him. Don't press the issue if he declines since many of the shops are not licensed to handle non inspected product.

Personally I didn't care for biltong when I had it in Africa as it is just to tough. They sure sell a lot of it tho.

There is a place here in Chilliwack called Billy Bobs jerky.. He imports tons of South African spices and marinades plus has several types of dried meats. I suggest giving him a call he would know what to do and he may have the necessary spices already.

You can buy it online from www.biltongcanada.com There peri peri (hot) flavor is my favorite.

The makers are right here in Cranbrook. I buy their boerswors all the time...fantastic stuff.

    Cheers
