Thread: 64 lbs of sausage in 2 days.

    64 lbs of sausage in 2 days. plus recipes update

    5 different recipe's and many different game animals meat added(Bear, deer, moose and pig) I like 70/30 pork.
    28lbs stuffed into casings and 32lbs left to go tomorrow.
    Ground up bacon for one recipe today and will be grinding up an onion for a recipe tomorrow.
    Got all the recipe's from watching utub videos. 1 from a 50 year old cook book.
    Test patties are great so far. I mostly make breakfast sausage. My wife says we have 34 weeks of breakfast sausage.
    32lb recipe on the block for tomorrow. My neck needs traction!
    I cook lunch for my wife every Sunday, breakfast sausage and eggs. It's tradition now after 12 years.
    Store bought just doesn't measure up anymore.
    I will take pictures and post them.
    10, 10 and 12 done the last day edit.

    Look forward to your pics... I always enjoy youtube vids when I want a review on how to make great sausage (I don't do it often).. but I'm sure many of us would love to see one or more of your recipes and methods written step by step.. cheers..

    One thing we can’t get down here in Mexico are good breakfast sausages.
    I think I’m gonna have to breakdown and make my own.
    Should have kept my grinder. Damn

    That is a lot of work. Even more cleanup.
    Thats about the most I have made at one time. Multiple recipes makes it even more of a challenge.
    Well worth it for months to come.

    Food processor with small bits at a time for a short burst

    good for pescada empanadas filling too
    Glad to say I have hunted Northern BC

    Simon Fraser had pretty good judgement on what he found in BC

    A local store usually has pork legs on every fall for $2.00/lb, they can almost be too lean, easy to adjust with fat
    We just make loose ground for patties

    Jan 1st is usually when the legs go on sale for about .99-1.25/lb. Thats when we load up to about 150lbs for the year of sausage stocks. Cut them up and vac pack for future use.

    Wanted to buy. Brio or ButcherBoy as have experience with those brands working in the meat business but too expensive .
    You can find then at auction places that are selling of restaurant or butcher shop equipment .
    Anyway last year I bought. Cabelas 1 Hp or 1.5 Hp and the thing is a beast .
