I have heard good things about Work Sharp . If your not doing many knives daily or weekly sharpening by hand is good to learn .

Another vote for worksharp. A little pricey, but definitely worth the money. I've had mine for 3 or 4 years and no complaints.

Worksharp for sure, had mine for about 20 years and has never let me down and I sharpen my knives just about every month that includes our kitchen knives.

I have always used a Chef's Choice sharpener for the first stage:

That will get them sharp, but a finishing touch up with the ceramic rods turns any knife into a Razor Blade:

    Cheers

    Re: Knike Sparperner

I was given a Chefs Choice sharpener by my Dad a couple of years ago which I thought was funny because when I was a chef I had always sharpened my knives on a stone and he knew it. But he said that since I was long retired from the kitchen maybe I wanted an easier way to do it and he was right! The machine works great, then I just hone them up a bit on the steel as required.

I went to replaceable razor knives for skinning/gutting a few years ago so I dont' even sharpen those knives any more. Guess I'm getting lazy after sharpening so many knives for so long!
