    it’s so hard to find quality brisket for the smoker besides tiny little flats that might feed two people.

    What’s your guys thoughts on the beef at save on foods lately? It used to be the main place I’d buy steaks, but the quality has gone downhill over the last year or so. Now they’re selling this imported grass fed junk that you need the dog to pre-chew for you. I’ve switched over to Sobeys for steaks now

    I think they’re all tough as a running shoe.
    I cook my brisket for about 18-20hrs at 180*-200*
    Falls to pieces no knife needed.

    same, 20-24 hours on the traeger.
    but the last brisket they had on sale was still absolute shit
    easily the worst briskets we have made and it was 3 different ones so wasn’t a cooking issue.

    that being said previous times we’ve grabbed from save on they turned out as you described. So to say we were let down was an understatement.

    I agree with the fatty assessment but after a trim the meat itself was good. I do them at 225* for 8-10 hours and then into a false cambro for another 3-4 hours and they come out fork tender and juicy as heck. You do lose the hard bark this way but it's a great tradeoff IMO.
