    Okay enough already Iron Noggin LOL. You are making some great meals and no matter what the time of day is my gastric juices are flowing !

    The Dexter Russell knife you had in the picture I used for many years lifting neck bones out of hog shoulders per disassembly line . Real nice non stainless that held an edge . I have a scar on my lower left forearm were the knife came through feather bones and bit me . 6 stitches . Was pre PPE days !

    Mine sees as much work in the field as it does in the kitchen.
    Excellent pig / lamb / beef sticker for the many farms I service.
    Love that old shiv! Holds a RAZOR edge for a hell of a long time.

    Buddy dropped off some of the biggest damn oysters I have ever seen yesterday, along with a nice pail of fresh dug clams.

    Made up the sauce for BarBee smoking these monsters and readied the grill:



    Smoked with Hickory / Alder mix for 25 minutes on medium low heat:



    Turned out Awesome!



    Contrary to what folks think, these big boys are actually the mildest of the lot this time of year! Served them up with the bucket of clams, a fine Merlot, and cheesy garlic toast.

    Yummy all round!
