    My son made mooseo buco for Christmas dinner I was a little sceptical but It turned out unbelievably delicious.

    We don't do this for Christmas but we like something similar. We debone the deer, moose, pig and bear leg meat and cook it in the slow cooker with onions, garlic, salt, pepper and all whole bunch of other spices as the mood strikes me. 8 hours on low and its pulled pork style eating. Make gravy with everything but the pork.

    Don't think my Lady thought I was serious when she called yesterday to inquire what was on the menu for din-din. Frogs Legs. Long pause then OK...

    Had a few moments to kill when last over in Vancouver, so I stopped by my favorite Chinese grocers to pick up some quail. Right beside the birds were planks of Frog's Legs, so of course I latched onto a couple:



    Did the usual flour egg wash and seasoned bread crumbs before leaping into a hot frying pan:





    Got them nice & crispy on the outside, while tender and juicy inside. Served up with a cold German mixed veggie salad, and wild rice with chanterelles:



    Accompanied by an excellent Cabernet Sauvignon / Merlot blend:



    They are quite succulent! Close texture to chicken, but have their own delicate flavor. Happy I collected two planks worth as there will be another dinner like this one down the road...

    Another Tradition: New Year's Eve Fondue!

    Moose Tenderloin, Whitetail Tenderloin, Free Range Pork Tenderloin, Lamb, Turkey and the Trimmings:



    One of the most "civilized" ways to chow down IMHO!



    And yes, it was paired with a very good Merlot!

    Can't embed photos here any longer, but I just had a few slices of triple cold smoked venison from the mule deer buck I shot last November. Daughter has a nice smoker set up & I gave her a front blade & a backstrap to run through it. Deeelish... Upon sampling we decided perhaps one more smoke cycle & a bit more aging would be a good idea, just to firm it up a little more. She prefers all meat medium-well to well done & is a bit fussy when it comes to gamey tasting meat but commented that this has no hint of that.

    We've also ground up a good amount with the attachment for her Kitchen Aid stand mixer. Waiting on some casings she ordered to make sausages. Delayed thx to the Postal strike.... So far I've enjoyed tasty burgers from the grind mixed with pork fat & stuffed peppers with straight, lean grind. Next up might be a Sauerbraten with one of the roasts from a hind quarter.

    I simply don't wish to have yet another account with photo storage just to be able to post to HBC. MS OneDrive & Google Photos work for most everything else. Perhaps someday this site will get updated & it will work for me again....

    I can still post links but not sure about security doing it that way. Don't have anything sensitive stored on my cloud apps but don't wish just anyone stumbling around in there.
