Tough question, depends on who's doing the cutting and how big the bear.
6ft bear in early spring would guess 75ish lbs lean meat.
Pickins' are slim on a 3 year old, 100 lbs live weight maybe.
Great pepperoni with the right butcher.
Bears are heavy-boned animals. Net yield of meat is less than you would expect from a similar sized ungulate.
Plus their shoulder meat is tougher than other animals that don't dig for a living.

A 3 year old bear that is shot in the fall will put 75 lbs of boneless meat in the freezer.
The same bear shot in the spring would put 30 to 40 lbs in the freezer.
The challenge of retirement is how to spend time without spending money.

Yeah I agree with Big Boar...that is about right. If you take your time there is a lot of meat on the neck and rib area that could yield and extra 10-15lbs or so. Another factor is how well you field dress your animal. Hair and dirt can easily take just as much away.

got 86lbs off a spring bear last year. Did not measure or weigh before butchering. It was a hike and a half so we broke him down and carried out in packs. Once home, de-boned and timmed out majority of fat.
This was right before it closed so he had fattened up quite a bit already.
