I'm thinking of getting the Savage Lightweight Hunter in either .243 or 7mm-08 and want to put a light scope in the 30 - 35mm objective range.

I have a Redfield already, but thinking of something of better quality, better coatings, etc.

any suggestions? :)

Don't opt for a scope that is billed as "ultralight" or similar. They mostly all suck.

Or a 2-7X32 multi-x reticle Bushnell Elite...has Rainguard, better for regular hunting...
If you're climbing mountains after sheep and goats and you like to bash your scope on rocks,
definitely spend the extra money for the Leupold 2-7X32 VX2...:-)

I wonder how they would make scopes lighter without sacrificing durability?

VX11, 2x7x33, Leupold not much lighter than it, and a LT warranty

Z3 3-9x36 Swarovski. Comes in at 12oz and it's good.
