If you are getting sausage done no need to have them butcher it for you. Just cut it into chunks, make sure it is clean and free of hair then bring it to them in 25lb batches.

Definitely bring it to Kosiansic.... I tried some of his bear salami this year and it was unreal! Can't go wrong with any of his fresh sausage either...

Almost punched my tag today! Saw a nice blackie in a clearing, glassed it for a bit, and then decided that 2 hours in the heat of the day might feel like a really long drive with a bear carcass inside my car.
