Im hoping to take down my first bear this spring and just on the fence about the different cuts I want. I am thinking the backstraps, the hams smoked, some chops and pepperoni. I am also thinking about the ribs, do you guys often keep the ribs?

Yup. Slow roast them like pork ribs with some q sauce. Delicious.

Get as many cuts as you want. You can always have it ground down afterwards if you dont like it. I think you'll like it though

Bear side ribs were pretty good. They shrink down to virtually nothing, but they present themselves very nice. Bear jerky is identical to beef jerky IMO, and ill be making my loins all into jerky this year. All smoked bear meat is delicious, and the roasts are really good too. I just love bear!

Isn't that the truth...... on both counts!! Finding them isn't too hard but ground shrinkage can be wicked when it comes to yogis.
Sooner or later you see a brute and instantly the term "big" is defined for you.
