Let the "cat outta the bag" and have been getting lots of good to rave reviews on this one. (Including a couple forum members) My sis-n-law actually tried it and then asked for some for lunch for her and a few others.

Perfect for these spring geese.


Goose Irish stew
2 goose breasts
20 small nugget potatos
3 lg carrots
3 celery stalks
1 can chicken broth
1/2 cup of frozen peas
1 can of cut mushroom pcs
1tspn seasoning salt
3 bay leaves
1/2 tspn garlic salt
2Tblspns worshteshere sauce
2 Tblspn soy sauce
Salt and pepper
Cube potatoes (skin on) and carrots to the same size
Cut celery to half size of pots and cars
Put potatoes, carrots, celery, chicken stock, peas, bay leaves, mushrooms, and sauces into crock pot or stewing pot and add enough water to just about cover. Set to med heat.
Cut goose breasts into bite size cubes (remember they won't shrink in size)
Put flour salt and pepper into a large zip lock bag, coat cubed goose in flour mixture then flash sear all over in a frying pan with olive oil.
Once all the goose is done, add to TOP of stew, but do not mix.
Turn on high heat for 1 hr, then mix thoroughly, top up water if needed. Leave on high, stirring occasionally, for 4-5hrs.
Reduce heat to "warm" for 1 hr.
Thicken stock with flour until desired texture is reached.
