What is the steps of plucking and or scalding these birds allways breasted but wanna try a stuffed pheasant for dinner. Any tips appreciated.

I have not heard that one since I was a wee lad and yes it was my job to pluck and skin all the game we brought in. These days unless it is for a very special meal I just skin them and put a few strips of streaky bacon over the breast. If you find the bird drying out to much stick a few tooth picks in the breast and cover with a small peice of foil shiny side up this acts as a heat reflectorand also allows indirect heat to circulate around the bird.
