Let me know how it works for yah. I tried a similar recipe many years ago where it was strictly marinated like this and it didnt set to well through the whole roast. I think if you have a meat syringe it would make it way better and corned much better also.

I've made corned venison-just boiled up a brine and added pickling spice,let it cool down before immersing the meat for 6 weeks [its got to be held under the solution,I used a plate ]Pretty good too-rinse it in cold water and simmer it until tender.Its still makes you thirsty -so you need a cold beer to go along with it-and of course sauerkraut.I don't think the brine recipe is too critical.I just use what spices I happen to have
