Now that the new season is upon us, I thought I would suggest the link below for those who may be interested in making their own sausage.

just wondering if you can subistitute moose for venison? If so do i need to adjust the fat content up or down? Thanks for the links though, awesome info!

Of course you can sub and use the same recipe to a T unless you prefer more or less fat in general. Use elk, moose, bison, bear or whatever, you cant go wrong with any meat and it all tastes good when its done correctly.
