Each year for our annual hunt in the Peace my wife makes chilli, meat sauce, lasagna and meat loaf for me to take. She uses meat from last years hunt if there's enough left.


This year we have quite a bit of moose and elk left so I decided to contribute using my newly developed skills(??) at making sausage. A couple of weeks ago I made up 10 lbs of summer sausage using the Hi-Mountain jalepeno mix. I added some crushed hot peppers and garlic and it turned out great. Unfortunately, some of the family got into it and decimated my stash.


So yesterday I made another 10 lbs(6 lbs moose/elk, 4 lbs ground pork) using LEM's Backcountry mix. It has a fairly strong garlic flavor and is darn good.


Today I made 5 lbs(4 lbs ground pork, 1 lb moose elk) using Hi-Mountains bratwurst mix. I went with more pork so the sausage is moister. The taste test was favorable.


Tomorrow I'm making 5lbs of hot Italian. This one will be from scratch using a recipe that I've tried and liked.

The only thing I don't like about your pics is that the beer doesn't appear to be open!

Here ya go.
Hot Italian Sausage


5-lbs pork
1-cup cold red wine ok
1-cup chopped fresh parsley.
5-teaspoon salt
1-tbsp garlic powder or-4 to 5 garlic cloves, minced
1-tbsp fresh ground pepper
3-teaspoon cayenne.
5-tbsp fennel seed (the one change I made was reducing it to 4 and then grinding in a spice grinder).
2-teaspoon crushed chili peppers
5-tbsp paprika.


Combine all, mix well & stuff into hog casing
