we bought a smoker today, a little chief.

I am curious about some recipes for smokes anything.

what are your favorite recipes & things to be put in the smoker?

today I'm trying 3 forms of smoked salmon. I used a sweet & savory brine but the fillets cut down fit onto 3 racks. so 1 I will let smoke straight, 1will be basted regularly in a sweet dressing & I think the third quill be smoked in a spicy rub. any other suggestions?

The brine I use, I substitute all the water with apple juice.

1 cup coarse salt 2 cups brown sugar is the tried and true.

I like to use sea salt, rosemary on a leg of deer then smoke it up.

Fancy molasses, onion powder, garlic salt, ketchup, dijon mustard, smoked paprika, black pepper, BEER, red wine vinegar, war sauce and tabasco makes for a good marinade

Salmon University (a fishing website) has a very good brine method and recipes.

in respects: there is wild pork out there. there is some here on the island I hear, but smoker recipes wold game or not does answer my question. thanks.
