Hello wise cooks and outdoorsmen of BC,

Does anyone have a recipe for Dall Sheep Sausage?

I have cut my steaks, wrapped my roasts, ground some meat but was hoping to try make some sausage from the remaining meat from my sheep. I prefer ground moose (to ground sheep) so am looking for a good recipe that will highlight that unique flavor of sheep meat.

Any ideas?

A Dall is definitely a bucket list for me.

Cant help with the recipes, but thanks for the inspiration!

Nice rams! I like hi mountain italian or jalapeno summer, if you are into kits, never had sheep but works well with goat. I use 85% game and 15% pork fat...tastey!

Sorry no help with the recipe but well done on the Dall's!! Thats a definite bucket list animal for me, hopefully next year. There's got to be a story there somewhere????

hmmm best bet is German dinner sausage recipe, be sure and use fresh garlic cloves,and fresh black pepper..it does matter, also the water content added is more important, I prefer pork shoulders for the pork addition the right mixture of fat to pork ratio, AND COLD WATER with the natural casings for a least 24 hours, send me apm if interested and i will send a good sheep sausage recipe that wont hide the natural sheep taste but enhance it..

The Boreal Gourmet cookbook has a couple of interesting sausage recipes in it that might be worth checking out. I plan on making some up this year if I get myself a moose.
