The closest response so far. Fall critters have been eating dead plants. This does Not make for the Best eating.
Late May is the Best eating meat. Winter rigors are over and purged, the animals have now been feeding on the most suculent grasses and forbes for a couple of months.

May is Best Meat Month!

I have to say any opening day for all animals mentioned it will put the best meat on your dinner table..

That butcher told you the opposite from what any butcher has ever told me or from what I have ever seen, moose generally have more fat than deer. Also, from what many butchers have told me, you don't want wild game fat as it goes rancid very quickly and easily even when in the freezer apparently, so they generally trim off as much game fat as possible and hence why they will add pork fat after if needed.

The use of pork fat is more to do with the fact that a lot of the 'gamey' taste comes from the fat itself. Now which animal has more fat? I have no clue. I think it has to do a lot with the individual animal and when you shoot it (pre or post-rut). Now I'll have to do a scientific experiment this year and drop and a moose, muley and whitetail and get back to you with which one has more fat :D Two more weeks!!!!

deer are still eating green well into october they chase it.....

deer are usually good tasting from opener till mid october even early november on a young buck not really involved in the rut. least hereabouts. they are fat till then as well most times.

Elk - Sept before the bulls gets too deep into the rut. Cows are fine anytime.
Moose - I don't know if there really is a best time during legal hunting seasons. All good.
Deer - pre-rut Sept/Oct.

Fat on the outside of meat is good as it keeps meat from drying out too fast while hanging (although you don't need to hang any game other than cooling it before cutting! :razz:).

Rookie question: you guys find this is the same with deer? Does are good eats all the way through? I'm thinking specifically about the Whitetail anterless here in the OK...

My early Oct little mulie buck was delicious. I'll be aiming to have a buck down and on the cutting board before mid October this year. Mmm, mmm.
