Sausage or pepperoni recipes??

I am looking to try and make some sausages and pepperoni for Christmas and need to find some recipes. I want to try doing small batches untill i find a recipe that i like. Any help would be great thanks.

stuffers has pre mixed spices approx $5.00 for enough for 10lbs I've tried the summer sausage turned out real good for smoked and the hot italian also good for fresh I've been using the 22mm colgon casings for the fresh instead of natural casings they work way better and the guy's there are real helpful with lots of books on the subject.

I seen a good edition on "canada in the rough", look up the cooking section and they had some mouth watering recipes!
