View Full Version : Wholesale pork for sausage

I have started making my own sausage and think I am set up well enough to do up a whole Bear this season. I will probably need a bit of pork to mix in and have come across a source for wholesale pork.


I was quoted:
$1.50/kg ($0.68/lb) for lean ground.
$1.80/kg ($0.82/lb) for whole cuts such as shoulder or butt.

The ground comes in 10 - 15 kg boxes and the whole cuts come in 20 kg boxes.

Has anybody come across any better deals than these prices?

That's dirt cheap! but do you know where your pork is comming from? I know that local pork costs more but has higher production/animal care standards , and i would eat ANY Canadian Pork no problem. But would want to know the history behind pork that might be comming from out of country. Those prices sound like some big company possibly dumping product? if this is local product please msg me so I can get a killer deal as well.

Yes that sounds like a great deal as I stock up when Save-On sells it for $0 .99/lb. Who has this good a deal and like was stated where is the pork coming from?

good deal for sure,,, i used to get it for $50 for a 70lb box of trim

i have never seen it that cheap. I am looking into raising 2-3 pigs this year but the cost to raise them is about $2-3/lb to be sold at about $4llb and leaving the family with no cost fresh local pork.

i just bought 2 pigs from a farm for $300 a pig, when they get slaughtered they area 250-> 260 lbs,, so that leaves a bit of meat after i butcher it, don't quite know what it will yield in the way of solid meat but i can hardly wait!!

Look at Johnson Packers I work for a meat shop in kamloops during the fall and we buy all our pork from them. There pricing is the best we have seen. Great quality of local pork.

Also pork butts are the shoulder and I think they are great for sausage. Good balance between lean meat and fat.

I usually by my pork at around the same price. take note that in the fall Sept/Oct is when most grocery sores have specials on pork legs, and the prices are cheaper as this is when the majority of slaughtering takes place.
I as well make allot of pork sausage and mix it with goose breast and venison for my game meat sausage. the problem. Tip the shoulder is your best cut for sausage as it has more fat=more taste, the legs tend to be to lean and your sausage will tend to be on the dry side=not as moist and tasty. Also make sure to use or have them use the coarse disc for grinding otherwise the it will taste like saw dust do to the meat being to ground up. if you are going to use the leg meat, I usually remove the skin and scrape the fatty side til you hit the firmer white fat cut it in large pieces and boil till fork tender, let it cool and fine grind it and add to the meat it will add the fat the leg meat is missing.

I find that most wild game I have made into sausage is to lean and therefor to dry for my liking and also it is harder to push through the stuffer into the casings. The pork is so mild and we only put a small amount in the wild meat just for a little moisture and I find it seams to enhance the flavor.

Sounds too cheap to me.

Why not just get some prok bellies or fat and grind that into the lean bear meat at whatever ratio you want. The bellies will cost a bit more per lb, but you won't need nearly as much to get enough fat content.

We buy ours at Costco. Ground pork, $1.98 per pound, usually 5-6 pound packages. We phoned around to local butchers and could not get it cheaper, and this is already ground, saving us a bit of time. We have been grinding about every 6 months, it's just an easy, clean way to do things.

i buy a hog from 4H kids every year at the PNE 4H auction,if you are spending that much to raise a hog they bettter be top grade
I usually spend the most at the sale as i promote 4H for kids and the max i spend is 3.50 lb that is for the best money can buy
If you cant raise them for that you should also support our local 4H clubs and buy at there sales as you will not get better pork anywhere

i use about 50% venison 30% lean pork and 20%pork fat.
