Sweet! I like the plywood smoker! Does it have heat or do you finish them off in the oven? We're having our own fest on Sunday, 40lbs of BT suasage to make...

Kinda makes me want to thaw out a bucket of sausage meat from the freezer and start a batch tonight! Do you use a Sausage mix then add to it, or do you start right from scratch? And, without trying to steal any family Sausage secrets, do you add a curing agent to your Smokies, then check the inside temp after a few hours to see if there cooked??? Sorry to kind of high jack your thread, but I enjoy making Sausage also, and I think the more a person asks, the more a person can learn from others. And your Sausage looks fantastic!

the smoker has a bradley smoke generator and for heat there is a 1500watt element on a digital thermostat

Very nice! Very similar to mine, I have a freezer with the bradley generator, a 1500 watt fan force heater element controlled by an old mechanical sauna thermostat with capillary tube inside.

My last smoker was a freezer using a hot plate and a sauna thermostat. This time i got a smoker element retrofit from cabellas and used a electronic johnstone controls thermostat. I also use a wireless smoker temp sensor in the smoker and one in the meat so i dont have to open the smoker to check meat temps.
