I made a rabbit confit (well, I guess technically snowshoe hare confit :-D) a few days ago. I've never tried it before, but wowza it was good. Much better flavour than the slow cooker method although I don't want to think of it's health value. I like hunting hares but I've been trying various cooking methods, they just aren't as forgiving as domesticated rabbits.
I used this recipe, more or less.

Next time I might cut down on the salt a bit. Still had some thyme in the backyard, but we used up the last of the fresh rosemary a week ago, so I used powdered. I fished out the garlic cloves and mashed them into some potatoes. I grilled it on the BBQ for about 5 minutes with a pan full of wood chips, like one of the comments suggested.
It was the opening course in a rabbit confit, grouse breast, venison backstrap meatitarian extravaganza! I think a few of the guests are thinking about taking up hunting now :-D
