View Full Version : First batch of pepperoni

This was my first time making pepperoni and it turned out great. I used the Hi-Mountain kit sweet and spicy. 75% deer 25% pork shoulder. I did two 5 pound batches. I used a cusinart mixer to mix meat and spices+cure and the grinder attachment to stuff it. I havn't used the grinder yet as I just got it and already ground the meat by hand. Stuffing worked good but being my first time I don't have any reference to what " easy" is. I think because I did it alone it was a little harder. The next day I put it in the bradly smoker with the smoke on for 1h40min then took it out and put it in the oven to finish ( only because it was cold and windy, the smoker couldn't hold temp ) and brought it to 170 degree's

You might want to check out Stuffers out in Langley. I use their pepperoni mix with great success. Looks good

The digital bradley's are great. They are by no means a great smoker, they are a good smoker for sure. But they sure do make it easy. I have been debating making a bigger smoker and using the digital smoke generator from the bradley. It would make doing bigger batches of peperoni faster

If yours are as good as the ones I made from ducks and pork they won't last long:-D. I did one batch in pepperoni sticks and the second batch made into patties for breakfast. Only trouble I ran into was stuffing, need to find a good one.

between friends and family that 10 pound batch is gone, exept for 3 sticks

I was thinking of going to Stuffers and check them out.

We also tried a HiMountain pepperoni kit when son was home for Christmas. Wish I would have just tried a mix years ago instead of trying to do everything from scratch. Turned out better than almost everything else we've done. We also made some of the Polish sausage, it's really good as well.
