Had some people over for B.B.Q. Elk backstraps done as roasts. I knew some of them had not been around game meat before, so as a back-up I did some chicken at the same time. It was some of the best strap I have ever had. The greasy chicken smoke added some amazing flavour. Most said it tasted like Prime Rib. There was lots of chicken left over. Elk.....not so much.

Sounds good, the prime rib cut is off the front of the back strap so maybe you chose the right chunk!!

Never waste the best cuts on people who won't appreciate it.

You took a risk, and it payed off. Hopefully you recruited a couple of new hunting buddies.

I always use the best cuts when serving friends game meat for the first time, why not ? if they don't like it more leftovers for me.
