The wife bought me a jerky shooter from Princess Auto, it came with some seasoning. But now their running out and I would like to mix my own. I’m going to try some of recopies from regular roast cut jerky and see how it goes. Anyone else have one of these and have a favourite recipe?

PS I like it hot!

3 parts black pepper
1 part onion powder
1 part garlic powder
1/2 part cayenne pepper
1/2 part hickory salt
If you want it hotter, add more cayenne pepper.
You need to get some cure from a butcher supply store. My supplier told me to use 20 grams of cure for 1 kilo of ground meat.
The Hi Mountain jerky cure and seasoning has some very good info on jerky making.

I tried this mix with some very well trimmed ground deer, it was great

Been trying to get at it, but working too much.

Screw work. Make jerky instead.
