After harvesting my first goat. I want to eat the tenderloins. Does anyone have any favorite recipes they would like to share for goat tenderloins and roast. I have heard the boiled rock recipe and it does not sound that great. Should I let them age in the fridge before cooking? Any hep would be great. Thanks

Since goat is usually tough the slowcooker is your friend, great taste though. Any recipe for wild game will work well, I've gotten some good ones by "googleing" it.

The goat I got wasn't tough, as long as you don't cook it well done. You can even do it on the BBQ as long as you cook it rare to med rare.

Goats can be tough, so the ones I've taken usually ended up canned for stew meat. Try a marinade of your choice on those tenderloins. Slow cooker for the roasts.

Thanks everyone. Found a few recipes on google that I may try in the crockpot or the roasts. Think I will marinade the tenderloins up and have em tonight.

Sorry Brew, but there is nothing tender about the loins on a goat,,,,keep chewin...lol

Goats can be tough, so the ones I've taken usually ended up canned for stew meat. Try a marinade of your choice on those tenderloins. Slow cooker for the roasts.

They make great peperoni's, nice and chewy like jerky

Find a Greek souvlaki recipe. The goat I got a few years ago was very tender.

We did the backstraps from my goat cut into little steaks on the bbq. I had aged them a few days in the fridge before cleaning them up. They were a little chewy but not too bad, Ive had beef steaks with too much gristle that were worse. The flavor was good too.
As for the rest of it I made some into grind and used it for nachos, spaghetti, etc and it was fine that way. The rest of the goat chunks I put in stews. If the recipe said brown the meat and boil for an hour, I boiled for 3-4 and it was fine. Slow cooker would work well too.

Did a goat curry for our game banquet, was the first thing that went, unfortunately there was not enough for everyone to try. Google a Thai curry recipe with lemon grass, green curry paste and coconut milk included in the recipe and you cant go wrong. Slow cook until tender. Enjoy a tasty treat.

marinade for 24 hours in a smoker brine to break down the sinue then rinse in cold water slow cook in teriaki .

A friend from work gave me this one:

Take a goat roast and marinade over night.
Place in a pot of water with an average size river rock (granite is the best).
Cover with water and cook for 6 hrs.
Drain, through out the goat and eat the rock.
Enjoy.

Just doing some jerky with a roast right now. I let it marinade for 48 hours and is in the dehydrator right now. Let ya know how it turns out.
