Okay, so I didn't get a WT doe nor have I yet been able to connect with a buck. All this means that my next trip out will be the second weekend in November. I've never harvested a buck this late (well, never a buck at all :))and so my question is I've heard mention of bucks in the rut tasting not so good. How true is this? Was this the general subject of your question, Wrayzer?

Pretty much, I shot my muley end of October last year and he stunk so bad I had to hold my breath a few times gutting and dragging him. Meat was a bit gamey too, if you get the scent glands off and watch you knives on the meat it shouldn't be too bad.

Soak it in milk overnight to get rid of the game smell. Works a charm.

Make sure to have zero fat left on deer meat and also de-bone it do not cut it bone in. If you do these things you should never have to worry about gamey meat.

X2. Jeff - did you trim all the fat on that September buck before hanging it? my only bad experience with mule deer was with burger that the butcher must have left the deer fat when he ground it. The steaks and roasts off that deer were awesome but the burger was almost inedible. I butcher all my own deer now and have had zero problems - even with stinky bucks shot in November.

the only pack of meat ive had so far was a beautiful looking round roast ,no fat , im trying a pack of burger for tommorow .that will be the tell tale on the rest of the batch

Skin the legs 4" or so above the glands, cut down the outside of the legs peel it back to the hooves. Don't cut the glands or even touch them with your hands and you will be ok. I use the same knife for everything. Clean hand holds the knife other hand holds the fur back.
