What's your favorite venison sausage? Anyone have a good italian sausage recipe for venison? Or kielbasa?

My favourite butcher died & took his best recipes with him... One of my hunting partners has an industrial grinder & I'm thinkin' trying my own...

A buddy from Fernie was in for T-Giving with some fresh elk jerky. It was the best homebrew jerky that I've ever had. I'm happy to trade the jerky recipe for a sausage recipe... PM if you want.

Hansal Deli in Cloverdale. When I lived on the coast I couldn't make a thing that came close to the Kielbassa that they make. I have brought in a couple of "peak of the rut bucks" and the result was excellent.
