I had some deer salami I picked up the other day from the butchers, but not sure how to keep it. When you go to a deli it's always hanging in the air, and you never see it frozen. Any advise as to how to keep it? Freezer, fridge or hanging? Thanks.

its just like any other meat, if you tend to eat the whole thing in a couple of weeks, then leave it in the fridge. if you want to save some for Christmas and other events then freeze it.

If it is cooked and contains Nitrates you can hang it in a cool room 40-50deg F until it is rock hard. if it is raw cured with nitrates you can hang it for same amount of time in a cool room 60 - 70% humidity.
