Any body got a really interesting rabbit recipe?

I mix rabbit with pork and make breakfast sausages.

The measurements are odd, as this is what I measured on the kitchen scale after de-boning a medium sized cottontail.

MacDonalds Type Sausage

591 Grams Rabbit
147 Grams Pork Fat

Ground together then:

Blended in with 500 grams Ground Pork and 36 grams Crouton Crumbs (1/2 cup)

1 Tbsp Salt
½ Tbsp Dextrose
1 ½ Tbsp Sage
¾ Tbsp Black Pepper

Added ¾ cup milk to reach desired texture for stuffing into collagen casings.
