Just wondering what to use to stuff pepperoni into 22 MM collagen casings. I have made the mixture and have the casings and am using a Moulinex grinder with a sausage stuffer attatchment. It took considerable time and effort to stuff about 8 Lbs of pepperoni into casings. Seems the mixture is sticky and it takes time and lots of effort to push the mixture into the machine and thru the stuffing tube to get a finished product. Is there an easier way to stuff the casings, like a stuffer of some kind or ???.

Use lots of water when stuffing sausage. It will help out a lot.


We upgraded to a LEM 11lb stuffer last year. Well worth the money. I can stuff 50lbs of meat in 15 mins. If your planning on making all your sausage at home, buy a stuffer!

If you use crushed ice instead of water I think the sausage will be far less sticky and should pass through your grinder easier. Also use the coarse plate.
