Hey folks I just wanted a thread where we could share tips for making game specialty meats. I made a 6lb batch of wt deer breakfast sausage. Here is how it turned out.

How did the Breakfast sausages taste?

Here is my latest batch, about 55 lbs of mostly Muley and some Bison. I did Hot Italian, Pepperoni, Smokies and Slim Jims, so 3 cured and 1 fresh. I love the flavours of all of them but would like to find the "Ultimate" Pepperoni recipe. If anyone has a good pepperoni recipe they would care to share pls PM or post.

The Pepperoni (long), Smokies (stubby) and Slim Jim's finished and ready to go!! The pepperoni and Slim Jim's are done in Collagen Casings and the Smokies and Hot Italians in hog casings.

tomahawk that is one gourgous looking mess of sausage! Wish I had looked on here before eatin supper, I am hungry again and have a taste for ..................

Thanks Kodiak1, if you lived near here I would score you some! Do you know any good Pepperoni recipes ???

Any time I make peperoni I just get a store packaged seasoning and go that way.
I like Terriyaki and Honey Garlic man they are gods weight material of foods.
I eat till I about bust.

I used high mountain seasonings "Country maple breakfast sausage". I turned out great
