View Full Version : Guiness Moose Stew

My brother and I came up with this stew recipe. It's a hit so thought I would share it.

2lbs moose meat, trimmed and cubed
1 onion diced
4 carrots diced
5 sticks celery diced
6 red potatoes cubed (or new potatoes would be ideal)
1 tblsp dried thyme
pinch red pepper flakes
2 bay leaves
2 cans of guiness
2 cups water
S+P to taste

In a large pot on med high heat brown the moose meat in batches and resever. Turn down to med heat and add onion and sweat for 4min. If you wish you can deglaze the pan with a small amount red wine. Add the moose back and the guiness as well as 2 cups of water. bring to a boil and simmer covered for 45min. Add the veggies and potatoes and continue to simmer for another hour. Adjust seasonings as desired. Check if potatoes are done to your liking. If not simmer for another 30min covered. Serve and enjoy!!

An alternative to this would be to hold the potatoes and serve them mashed on the side.
