usually leave them unless I need bait for wolves.

Depends how nice the hide is. Real purdy ones get skinned and given away or tanned or whatever. Ugly or shot up dogs may get left or taken to the dump. I shoot for ranchers not for fur, but if they are exceptional then I'll keep them.
