in general What is your favourite duck/goose to shoot that will provide the best table fare?
i do know that taste will always vary to what its been eating. but having an opinion from other lower mainlanders will probably be the same by the food available for a particular species.

well i don't really eat ducks but once was given a sandwich made out of Green wing teal and it was delicious;.

how to cook a merganser:
take a rock boil it with a merganser cook until soft, throw out the merganser... eat the rock.

growing up on the south coast i've developed a real taste for those mallards that you grab by a leg and they puke rotten dog salmon on you. it's an aquired taste mind you.

For me its the Snow goose.

My dad and I have shot 4 on the island and to me they are absolutely the most delicious fowl out there... so far. I hear specks are really good eating too, but never have had the chance to eat one... still waiting for our speck season!!!

Mallard for me. I still remember the way Mom used to fix them. Just like a turkey. Bread stuffing in the cavity, roasted in the oven, and served with the skin crispy. Makes my mouth water just typing this reply.

I like to smoke the Canada goose breasts and make sandwiches with them. Toasted rye bread, a little dijon mustard and some red onion, topped with some melted Havarti cheese. Very tasty :-D

I've eaten a lot of birds in 45 years of waterfowling,mallards,teal and others shot both in BC and the prairies.In my opinion a grain or pea fed prairie speck puts everything else to shame,although grain or corn fed mallards ain't bad either! Gunner

Always wanted to try smoking some duck. What do you use for brine or do you even use one?


Its mallard for me. Stuff with apple, dried bread cubes, oinion, celery, and a little garlic. Mmm getting hungry thinking about it.

Wow... the widgeons my dad and I get are as tender as teal, and have a very nice and almost sweet taste.

Teal seems to be the second choice of hunters - not surprising really, but the darned things are so small that you need at least two per person :wink:...and, they are so hard to hit that it takes a lot of ammo to provide at least two per person! :eek:

Your list misses some of the best....

Brant, Canvasback, Wood duck...

and as I've said many times, there are very few off tasting ducks, but there are a very many poor duck cooks who make ducks taste off!

I use the same brine as i do for my fish. Brown sugar, soy sauce and a whole bunch of other stuff.

I voted mallard as it is the species that we eat most frequently and have used in the most diverse ways. However, an honorable mention must go to both the teal and snow goose. Until last year I had not eaten snows, but was very impressed with the subtle flavour. Teal we have discovered is an excellent addition to the top of a very simple pizza.

I've eaten many a pintail that tasted just fine! Please refer to the reply posted by Ian F. (#22). Then start your own thread about the correct way to cook wild west coast duck.

Thus far,,, I've eaten Widgeon, Mallard and Canada Goose. All have been fine but IMO, it DOES depend on how they get cooked. Waterfowl can be finicky when it comes to serving up good eats. :wink:

We just finished off our x-mas feast of CG, today.... Now THAT was some goooood eats! (BURRRP!!). :lol:

Well must be them south island widgeon then cause they can be bloody awfull had some out of south surrey full of oysters ,no thanks pretty well let them go or give them away..:confused:

Read the thread title again, it says best table fair. I think Brant would be between Coot and Racoon. And don't gimme the "it's how ya cookem b.s." Cooked herring spawn can't be dolled up no matter which way you slice it. :-D K

Slow roasted BBQ Goose... be ever so careful that it does not catch fire and this comes out great.... as for duck you can always do the Peking Duck recipe I just cant seem to get that great crispy skin.

I voted mallard because the best bird I've ever had was a mallard. However I do believe it's all in the way you cook it.

I'm on the teal bandwagon. When I was a wee lad I always heard my grandpa say "Them teal are like shootin' Jap zeros." I soon found out for my self why he said that, but they're great eatin for the size.

THATS REDICULOUS!!! HOW can you call yourself a TRUE sportsman and be so wastefull. You soak the Merg. in Jack Daniels and Cranberry juice overnight then roast it in the JD merinade for about an hour. THEN you trow the Merg. away and drink the gravey and to hell with the ROCK!!
