Made a batch of these guys up yesterday. Very tasty breakfast sausages.
13 Lbs Ground venison
2.5 lbs pork fat
1 tablespoon thyme
2 tablespoon poultry seasoning
6 Tablespoon Salt
2.25 tablespoon black pepper
6 teaspoon dry mustard
3.5 cups maple syrup
Ended up putting out just over 150 sausages
