I have a bunch of duck meat from this year I have been collecting and wanting to make some pepperoni. I have called 2 places ( Pitt Meadows meats, and A&K sausage) and they says they don't do it. Anyone here in the Lowermainland know or can do it. I havce never tried it before and would like to

Be aware of ENNIS MEATS,Had to deal with them this year was not good at all.

We have a freind who makes sausage. We tried making a farmer type sausage with duck and pork and pork fat.
Was hard to do as we didn't remove enough of the silver skin covering on the duck breasts and it kept clogging up the hand meat grinder.
The duck doesn't grind very well at all, was like trying to grind fresh liver.
We made the sausages and then smoked them.
We were't to thrilled with them at all, think we left them to smoke to long. Anyways the dog thinks they're great:neutral:
We just have a hard time eaten the darn ducks and we have tried a bunch of different ways. We found the easiest thing to do was to not kill them anymore. I don't believe in shooting what we aren't going to eat.

I've had nothing but great experiences from them and I use them for all my butchering needs. My dad even gets his meat for his restaurant from them.
What's your issue with them?

If you decide you want to try it yourself shoot me a pm.... I just went through this and can maybe help you avoid the issues I had. Also ask LorneParker1 what he thinks of the goose pep's.

i lived in langley for years and used Ennis 2x never again. but that is a different thread and i started it a couple years back.
wheymouth in Matsqui made some for us years ago as well as Kurt at Sumas meats. the stuff we had done from Sumas we actually called it Gmoouck.
it was goose moose and duck.

I have had more than one bad dealings with them,such as lost animals that I have dropped off with them, lost paper work and much more.
All seem to have the good and bad about them, seems that I have found the bad with these guys, will not deal with them again.

yes i did the same thing 2 years ago, was not much of a Duck meat fan, tasted too livery, so I live in Chilliwack and Johntons packers made me some farmer sausage using the duck breasts, and it was alright. I have dealt recently with Ron in Mission and he is pretty good, his prices are hard to beat, and he's been doing it for over 25 years, his number is 604-820-4257,

Don't use ennis their pepperoni is terrible would never buy it again. I have tried friends that was done at penguin in white rock
