I wouldn't eat any kind of weasel, unless I'm starving.

I've eaten most everything else.

Can't imagine beaver would be a pleasure to eat either. Guess I'd eat any of those critters if I really had to.

Beaver, from what I've read is actually quite the delicacy... I think it was said that the tail is the good part. I'd eat the beaver ;)

And I'm not being facetious either.

Baked Porcupine

The Back skin of a porcupine
Salt
pepper
Vinegar

1. remove the quills and scrape the skin clean. Wash Well
2. Mix two parts salt to one part pepper and rub into meat
3. Lay flat in dish and cover with vinegar
4. Stand for two days and turn twice each day
5. Remove from vinegar and hang for a day to dry
6. Wrap in aluminum foil and bake for 1 hour at 180deg C (350F)
7. Open Foil and bake until brown


Once eaten - no porcupine will ever be safe near you ever again.........

I'd try most things but carnivore's. had hoped to go on a Thousand Isle cruise in Ontario about 7 years ago. really wanted to try their Rack of Racoon on the menu!

I think there is stuff that while having a full belly I would say I wouldn't eat but after not eating for a number of days in a survival situation, I'd be looking for anything slower than me. Never say never. As for beaver....gotta be careful. Some of that has a shelf life!:shock:
