I am looking for a specific smoked salmon recipe. A guy had some that was awesome, it was thin fillets that were smoked and had a brown sugar sirop on it when done. Was the best I have ever had but havent been able to find the recipe. Anyone ?

Put the brown sugar or syrup on it just before you put it in the smoker. It's very messy but makes a great 'candied' effect.

Nog's system is amazing for sure but bring out your wallet:shock:. He uses a homemade commercial style smoker and doesn't go into the heat detail to much because not many folks have a smoker like his that can handle the quantity he is smoking. The heat and control of it is the key to a good product:-D. I highly recommend a Bradley. I used a Big Chief for many years with hit and miss results. When I got the Bradley so many variables got eliminated and the product just turns out WAY better.

All we ever did was put some season salt and a whole lot of brown sugar on it, then throw it in to the smoker. Once it is done it has a brown sugar glaze on it and it is very sticky and good.
