I do a few dozen a year, but don't really have a recipet. It's more of a "wing it" kind of thing.

I only use farm eggs, and duck if available. A blend of one or two types of vinegar, and the seasonings that I fancy on that day. Not White vinegar mind you "White vinegar is for windows and feminine hygiene!!" LOL

Experiment, it's all that much more fun!!

I have my own chickens and end up with lots of eggs every once in a while I have a good recipe at home and when i get there i will try to post it.

I actually prefer to use store eggs for pickles as the flavor isn't much different and farm eggs are tasty and seems a waste to pickle them.
Farm eggs are also alot harder to peel than store eggs especially when they are fresh. Store eggs can be up to a year old by the time you buy them :O

Farm eggs are also alot harder to peel than store eggs especially when they are fresh.
Like you I found farm fresh eggs a real monster to peel until I went looking for a site that told me how to peel eggs. If you take your egg out of the fridge and put it in Hot water, I use water right from the tap, for about 10 -20 sec. you will find that it will peel really easy.

When I was a young lad CKNW radio stn. in New Westminster used to have a fund raiser where you could take a bucket down to the foot of 10th st. by the old King Neptune and for $5 you could get a big pail of Herring. We would bring them home and My Grandmother would make rollmops. Man they were sure good!!!!!

I'm in China right now and yesterday was in a village where I saw pickled baby rats for sale. If you've been paying too much for your pickled baby rats, I might be able to help find a better deal...

Here's grandma's recipe"
8-12 eggs slow boiled for 12 minutes, then cooled in ice-cold water
Heat on stove the following:
2 cups white vinegar,2or 3 tbsp sugar,1 tsp salt,5or 6 whole peppercorns,1or two whole cloves,good dash of garlic powder or finely crushed garlic. Simmer for 5or 6 minutes.
Use a large jar or plastic container with a tight lid. Pour vinegar over eggs to cover. A few slices of onion optional.

I cheat and start on them after 2 days in fridge. 3 days is better. Never made the 4th day LOL

If you don't like pickled eggs, why post?

I use a large glass jar that holds 18 eggs.
In a pot, I dump about a cup of pickling spice along with some extra pepper corns, one large sliced onion and about 4 cups vinagar (usually a mix of two types). Heat the mixture until nice and hot. Dump mixture into jar full of eggs. Put the lid on and let sit until the eggs beg to be eaten.

Fry some herring then pickle the same way as the eggs above, you'll be glad you did.

GRANDPA'S FAVOURITE PICKLED EGGS

Ingredients

12 hard-boiled eggs
4 cups of malt vinegar
1 finely chopped chilli pepper
10 black peppercorns
10 whole cloves
3 cinnoman sticks
2 tsp of allspiceMethod

Peel the hard-boiled eggs, allow them to cool and then place them in a large clean jar.
Heat the vinegar and the spices in a saucepan until the liquid begins to boil. Reduce the heat and simmer for 10 minutes.
Remove from the heat and allow to cool to about room temperature.
Strain the liquid and pour over the eggs covering them completely.
Seal the jar tightly with the lid and store in a cool and dark place for a minimum of two weeks before consuming.

24 boiled eggs
1/2 cup of piclking spice
1 onion
2 cups of cut pickled bannna peppers
6 cloves of garlic
add hot habenaro sauce to desired heat.
fill container with pickling vinegar

If you like Garlic:
1-med onion, chopped or sliced
1c white vinegar
1c water
1/4c white sugar
10 cloves garlic

Purple Pickled Eggs:
2 cans pickled beets (with juice)
1-chopped onion
1c white sugar
3/4c white vinegar
1/2 tsp pickling salt
pinch pepper
2 bay leaves
12 whole cloves
1c reserved beet juice
refrigerate 48hrs before consuming.

If your farm fresh eggs are very fresh and you plan on pickling them, leave them in the fridge for 10 to 14 days. Hard boil and cold quench right away.
They'll peal far easier.

Yes. You should try it, they are awesome. After they're peeled I smoke for 40 minutes in my Bradley on the top rack with a pan of ice the bottom rack to keep the temperatrure down.

What i find is that the eggs don't soak up the spice very well, so if you want your eggs medium heat make your brine hot. You'll have to do that to taste, just add it till it's suits your definition of "hot"

hard cook eggs , peel , eat all the pickles out of a jar of bread and butter , sweet mixed , yum yums { pick your flavor } add peeled cooked eggs and wait a week or two , enjoy.

Hard boil as many eggs as you want to pickle. Cool & peel eggs and place in glass container* with a lid that seals well, to contain the smell in the fridge! Mix as many batches of brine as needed to cover the eggs. Let eggs sit at least 5 to 7 days to allow the eggs to pickle! Taste testing is encouraged! :-D
Brine:
2 tsp white sugar
1 tsp salt
2 tbsp mixed pickling spices
2 cups white vinegar
1 ½ cups water
-Mix brine well to dissolve sugar & salt. You can be liberal with the pickling spices.
*You may also layer the eggs with raw onion slices and/or sausage slices (something that does not need cooking like Ukrainian Sausage or Mennonite Sausage).
