I've done lots of perch that way, but you still have all the bones to pick out when your eating them. For larger perch I still fillet them. That way all the bones are gone.

when i used to gut 1000 humpies a day i gould do a fish in 10secconds.
not sustained. 3 fish a minute was cruzing speed

I know nothing about perch and it was a slick method IMO but that was one hell of lot longer than 10 seconds:-D.

But I can do perch, continuously, in 38 seconds per fish with two skinless boneless fillets in the bowl. With a kevlar glove, and outside where I don't have to worry about perch roe splattering the kitchen wall or whatever! :wink:

I will bet a hundred perch fillets that nobody could use that guy's technique, as described, to clean a perch in ten seconds.

And who wants all the bones left in??????????????? :confused:
