View Full Version : Pineapple-Bacon-Duck Appetizer

Thought I would pass this along. I just cooked this sucker up for lunch and they were fantastic. 550* for 10mins got the kitchen a little smoky, but nailed the duck (1'' cubes of wigeon) right at medium rare.

I soaked the cubes for ~6hrs in salt bath (do this with all my ducks) before marinating overnight.

I followed the recipe exactly except added a tsp or worchestershire and extra garlic and pepper. Next time I'll use even more pepper flakes as it's still not very spicy. Killer appies for sure! Might whip some up for a game banquet coming this weekend!

Thats looks great. Should work with just about any game meat really. I'll try it with some grouse and see how she goes. Thanks for the link.
