Making some sausage, looking for new recipes. Please share as much as you dare about your spice mixtures.

Here's one that is pretty tasty: Cook it by itself or use it for sausage meat. You can also smoke it. Prep time about 2 hrs. Cook time about 10 mins.
Ingredients:
4lb venison
1lb. pork fat
1/3lb bacon
8 tsp kosher salt
6 tbsp dry red wine
pinch black pepper
3 tsp fresh ground juniper berries(if can't find go without)
2 tsp fresh minced garlic
2 tsp minced shallots or onion powder
2 tsp fresh rosemary
1 cup of water
Directions: Cut venison,bacon, and pork fat into 1/2" cubes.Mix all ingredients in large bowl,cover with plastic wrap and stick in the fridge overnight. Chill them in freezer for 20 min. then grind with 1/4" die into a bowl that is set in ice. You can also use a food processor for this step. Put all the meat in a standing mixer and mix on low speed for 1 min., add a cup of ice water, mix for another minute or until the meat looks sticky. Fry a little bit too taste, make sure you like your spice mix and adjust to taste. Put into your casings or make patties out of them.
The meat to fat ratio is the trick!!! Your sausage must be 25-30% fat,or it will taste grainy and tough. Everything else can be adjusted to taste!!! Hope it works out!!!!!!:-D
