Hi All,

I am wondering how long I should hang my deer for. I live in Steveston and the temp for the last couple days in my shed is around 8c. Is this to warm? Should I process now, or can I let it hang for a few days? I really want to make sure I do this properly!!

Any help or advice would be greatly appreciated!

No reason to hang deer don't notice a difference in taste.

Hanging meat doesn't change the way it tastes, the purpose behind hanging the meat is to let the chemicals that breakdown within the meat (as it ages) assist in tenderizing the meat. That is why when you purchase beef the meat that has hung the longest tend to be more tender

wild meat has different enzymes than domestic meat
You really don't need to hang wild game the same as domestic meat
On the west coast with the moisture you have been having lately and at 8 degrees and in a shed I would tend to cut it fairly quickly as you are more concerned about mold starting to form and blow flie than any rot starting to form

Hey there,

Comming from a meat cutter, hanging meat should be at 3 degrees celcius(give or take and couple degrees). 8 degrees is a little warm. A couple days wouldnt hurt, however I've shot deer in the early archery season in August and started to cut them up the very next morning before the sun even came up. Ive never had a problem with taste or tenderness with cutting them up within 12 hours of shooting them.

we let ours hang for five days if we can. if its to warm we cut it up the same day. no difference in taste. 8 degrees i would cut it up

X2 on that, and less wasted meat too, since you aren't discarding all the "bark" that you have to trim off.

i only hang deer for a day or 2 depending on how busy i am and the weather.
If i have time i will butcher the day i shoot but usually by the time i get home and skin the deer and deal with everything else i dont feel like butchering, so i leave it till tomorrow.
