Is it better to skin out an animal before quartering if we get one that has to be packed out of the bush.

If your talking deer you may only need to half it. But then again, it depends on a few things. If it's a short distance the added weight of the hide may not be an issue. A long pack, you may even need to consider de-boning?

A moose on the other hand, shoot in on the road!!!!! LOL

Depends, leaving the hide on usually will keep it cleaner. But it is best to get it off as soon as you can for cooling.

I have quartered it in the bush! Left the hide on, keeps it cleaner! If it is hot out then skin it quarter it and wrap it in cloth. If it is cool out like it is here in PG, then the hide is not as critical to get off, and you can not be as urgent as when it is hot. I like to skin it out as soon as possible, as it is easier to skin out when it is warm. Hope this helps. Moosin

If you need to pack it out, there is no sense in carrying the extra weight of the hide. You can wrap it in good cloth or not and still keep the meat clean.
