Looking for ideas where to purchase pork and pork fat for making sausages. I definately need to add more fat as the last two batches have been a bit on the dry side. Lower mainland, I live in New West.

Penguin Meats next to Stuffers in Langley. You have to but a certain quantity minimum from them though.

Costco sells ground pork at a reasonable price as well.

Save-on, Overwaitea, Coopers has an anual sale for pork buts as well. Can't remember exactly when but I think it is in Fall or early Winter.

We bought our pig fat from Johnson's packers in Chilliwack. You can buy a 50 lb. box that will last you a couple of years for less than you would pay for 20 lbs from a butcher other places like Britco pork in Aldergrove. Just make sure if you do not use it all this year that you double bag it and make sure there is no exposure to air.
As for sausage, in my opinion the optimal mix is 25% pig fat, 75% deer or moose meat. We have tried many ratios over the years and the best by far is 25% by weight. Good luck.

Penguin is in Whiterock, the store your thinking of is Britco. They are not cheap, the ground at Costco is about as a good a deal as your going to get, unless you find the sales at Save on.

Twice per year Save On Foods and Price Smart Foods put on their pork butts for 96c per lb. Keep yours eyes peeled.

I was talking to the owner of Galloping Goose Sausage in Metchosin the other day about game sausage preparation (which they do, expensive but worth it for the gourmet taste). He told me that he only uses beef fat because pork goes rancid quicker. Is this true? And if so, would you be able to get a good supply of beef fat for a price close to pork?

Costco sells pork picnics, just ask them . same price as ground pork.

that sale is usually in febuary and its pork legs that is on sale not pork butts alot less fat in them...usually thought and quite regularly u can get pork picnics on sale for bout 99 cents a pound and thats what u should be usin for sausage...

Try the meat dept at T&T generally it is a lot cheaper than your Save-ons or Superstore. Purchase quite a few when I was going thru a BBQ pulled pork binge. ;)

Pork butt has a high (relatively) meat:fat ratio. Pork belly, on the other hand, is almost all fat, but it is generally more expensive. However you will need less of it to make your desired ratio.

Next sale is usually in Jan, last Jan they were going for .89c at Save On in Nanaimo for the whole rear leg, generally 20-23 lbs average, this will give you lots of pork and some fat.

Instead of using butt and fat, try pork neck or belly. It's a little cheaper than butt. Belly has an average of 60% fatty tissue content and neck has an average of 40% to 50%.

Game sausages should have at the very least a 25% fat content otherwise you get what you already experienced. Fat is also what holds the flavors together. If you make deer sausages try using beef (steer) kidney fat Pitt Meadows Meats (604) 465 4752, will save some for you is you ask. Beef fat flavor compliments deer meat a lot better than pork and has less fatty acids.

I used to live in New West and, although I can't remember the name of it, there is a little butcher shop here, right beside the postal outlet.

costco has ground pork for 1.50per lb. Already ground. I bought some pork trimmings and they cost the same.

A local chef put me on to this farm that raises these free-range Berkshire pigs. I believe it is also sold at Windsor meats in Vancouver. Apparently these pigs have a higher fat content in the meat and the flavor is outstanding.
